Soya chunk pulao

Soya chunk is famous for its rich protein content. It's the cheapest vegetable protein (1 INR = 2g of protein).
One of the ways to consume soya chunk is with rice. Add some biryani masala to make it soya chunk biryani.

Equipment

  • Frying Pan

Ingredients

  • ½ cup Rice
  • 1 cup Soya chunk
  • 2 tsp Cooking oil Any preferable cooking oil
  • Tomato
  • 1 Onion
  • cup Chopped carrot Optional
  • cup Chopped capsicum Optional
  • ½ cup Beans Optional
  • ¼ cup Green peas Optional

Instructions

Preparation

  • Soak rice for 30 mins
  • Boil 2 cups of water and once water is boiled turn off the flame and soak soya chunks in that water.

  • Chop some veggies like tomato, onion, carrot, beans, capsicum, green chilly

Cooking

  • Take a pan and heat 2 tbs oil. Add some mustard seed and whole jeera.

  • Add a pinch of asafetida(hing) and cinnamon.
  • When mustard starts popping, add chopped onions. Cook it until onion turns brown.

  • Add tomatoes, carrots and beans.

  • Add capsicum, green peas and green chilly.

  • Cover the pan and cook veggies for 5-7 min.
  • Add ½ tsp turmeric, ½ tsp red chilli powder and 1 tsp coriander powder. Give it a quick mix
  • Squeeze soaked soya chunk completely (to remove water) and add that in the pan.

  • Add rice and mix it. Cook for 1-2 min and then turn off flame.

Serve and garnish

  • Add some freshly chopped coriander leaves.

  • Serve on a plate and garnish with 3-4 mint leaves.

Notes

Serve it with fresh curd or raita.
